Must-visit: The newest rooftop bar with a view

Justin Quek’s FLIGHT gives Ce La Vi (the former Ku De Ta) a run for its money as Rooftop Bar with the Killer View at MBS. And the vibe here is cooler, too

Both Ce La Vi and Sky on 57 - local celeb chef Justin Quek’s swish French-Asian restaurant, have long been neighbours on the vertigo-inducing 57th floor of the Marina Bay Sands. However, while most tourists flock to the boisterous Ce La Vi for drinks and more favourable city views, people who visit Justin’s restaurant are usually his fans or well-heeled foodies. Yes, you can enjoy the lovely vista from the eatery’s floor-to-ceiling windows, but the open-air terrace wrapping the restaurant was previously largely empty, save for some seats for guests grazing on bar snacks.

Finally, someone noticed the waste of prime space. That deck now houses a sleek new al fresco sky lounge called Flight. It serves cocktails and bites, with funky “contemporary bottle service”, pairing premium pours with chichi mixers.

THE DÉCOR: Flight is essentially a boardwalk surrounding Sky On 57, right next to the MBS Infinity Pool. So you may encounter some tourists in soggy bathrobes in the elevator enroute to the bar. The look is luxury resort, with lots of soft blue tones and wood. There are two main city views: closer to the reception area is the, um, less glamorous view of construction sites and the port, but it’s also quieter here, which we like. Further in — unfortunately smack right next to the smoking area — you get a much more spectacular view of the entire bayfront area.

THE VIBE: Depending on what time you hop by, the vibe could be chill pre-dinner drinks or slightly more upbeat, thanks to the late-night crowd of hotel guests and trendy locals and expats. Still, it’s way more relaxed than its neighbour Ce La Vie. For now. The music ranges from pop to cool up-tempo lounge and is curated by Singapore nightlife stalwart DJ Patrick Oliver.

THE BOOZE: The drinks are created by Lucas Swallows, 32, the American beverage director for Marina Bay Sands and former bar manager at Osteria Mozza. There are two ways to get your tipple here.

The first is premium bottle service with oomph. The accompanying mixers aren’t just an afterthought (no Ribena here, thanks) meant to help you chug down harsh spirits. Instead, you get a series of thoughtful, freshly made sodas to pair with your premium spirits: think DIY mixology with atas mixers. We ordered some Hendrick’s Gin ($280 a 700ml bottle) mixed up with delicious Hibiscus Tonic, which is like a tarter, more complex cranberry fizz.

Unfortunately these house-made sodas (there’s an interesting sparkling coconut water too) aren’t available unless you order a bottle of booze. But no worries, just get a cocktail from a list of classics with subtle Asian touches. We love the French 57 ($26), a spin on the dry champagne and lemon gin classic, the French 75. Here, it’s given a sweeter, more floral note with yuzu-laced umeshu and honey for a sparkly, smooth drink. The lurid Blue Sky Margarita (above left, $22) may look like a tacky hotel lobby tipple from the ’90s, but it’s actually a tangy and spicy lime and galangal-spiked margarita coloured with a splash of citrusy Blue Curacao. Yum. If you're feeling patriotic, get Lucas's take on the Singapore Sling (above right, $24), a lighter, fresh fruit version of our usually unbearably cough syrup-like national cocktail.

THE BITES: The bar bites by chef Justin are a mix of European and Asian small plates, like Truffle and Cheese Arancini ($12 for nine), deep-fried risotto balls served with truffle aioli that have crispy exteriors and gooey centres. Also try the Chinese Lu Shui Hamburgers (above, $25 for four), soft steamed mantou filled with melty kurobuta pork belly, the fattiness cut through with a smear of zingy English mustard.
