Dish title: Stir-fried tom yum goong with Coconut, lemongrass and water melon juice

This is one of my favourite dish, I used to cook this when I was alone at home.
For a start, we need to get the following ingredients finely sliced: lemongrass, kaffir lime leaf, galangal( Thai ginger) and the shallots.

After that, we put all the ingredients into the wok and stir-fry with oil & chili paste until the flavour comes out then we can add the shrimp. It can be seasoned with palm sugar, fresh lime juice, fish sauce and lastly very importantly is the coriander. I served this with some creamy coconut cream, infused with Thai crushed herbs. As my Style!!
