Dish title: Fighter

It is named so after the fiery red sambal prawns. It symbolises the determination that I have towards life. It also meant that I am ever ready to take on any challenges given to me. Strong and fearless.

Another side dish which I have presented is the simple mango salsa. Fresh and easy to pleasure anyone who eats it.

Lastly, I ended my dish with a spread of curry mango puree with molten lava egg. The outer part of the egg is crispy with a soft and lava-like york that flows nicely when it is being consumed. 

Recipe

Serves 1

Ingredients:
- Chillies
- Onions
- Garlic
- Prawns
- Sugar and salt
- Oil

Steps:
1) Clean and devein prawns. Blend the first three ingredients with some water. Set aside.
2) In a pan, put some oil and blended ingredients. Fry till fragrant. Add sugar in and mix well.
3) Add the prawns and cook under medium low heat. Once it is cooked, put some salt in and give it another mix. Turn off the heat and serve.

• Mango Salsa

Ingredients:
- Mango
- Onion
- Cucumber
- Chillie
- Lemon juice
- Salt and pepper
- Keropok
- Oil

Steps:
1) Cut mango, onions, cucumber into cubes. Deseed chilli and chop into small pieces. Put all in a bowl.
2) Squeeze some lemon juice. Season with salt and pepper.
3) Heat up oil in a deep pan. Fry the keropok till it surfaced and cooked.Place them on a plate line with absorbant paper.
4) Crush some keropok on top of the salsa while assembling the dish.

• Mango sauce

Ingredients
- Mango
- Curry powder
- Salt and pepper

Steps:
1) Puree mango. Season with salt and pepper. Put a dash of curry powder. Mix well.

• Molten Lava Fried Egg
Ingredients
- Egg
- Breadcrumbs
- Addtional egg for coating
- Plain flour
- Salt and pepper
- Slices chillies for garnishing

Steps:
1) Mix the dry ingredients in a bowl. Set aside.
2) Beat egg for coating. Set aside.
3) Put breadcrumbs in another seperate bowl. Set aside.
4) Boil egg for 5 mins. Shock them in cold water. Peal eggs carefully.
5) Heat up oil in a deep pan. Dip boiled egg into flour mixture, egg mixture, flour mixture and then breadcrumbs. Fry till golden brown.
Place on absorbant paper. Topped with slices chillies.

Assembling:
On the top, place the sambal prawns. Garnished with corriander leave.

Middle, line the salsa in a straight row.

And the last line, scoop some of the mango sauce. And then place the molten lava egg at the end. Garnished with sliced chillies.
