Mango curry with grilled chicken
A creation by my father who would cook this for the family whenever my parents are back in town, it blends two very Asian components - the mango and the curry powder - into a dish that plays on the tongue. Sweet, spicy, and savoury all rolled into one, textured by the smooth creaminess of the milk and curry, supplemented by the juicy chicken breasts that has been air-fried. It's a very versatile dish that can be used as a starter or a main, and changed to fit different palates and dietary requirements.
(unfortunately for me, they didn't have fresh mangoes at NTUC on the day of the challenge, which completely ruined the challenge)

Sweet dish: No bake cheesecake with apple-cinnamon crumble and aloe vera
Something from the girlfriend who's health conscious, who like me, does multi-sports and who like me, doesn't have much time at the end of the working day. It's easy to do and can be prepared way in advance - it's layered with a generous serving of ready-made apple-cinnamon crumble (to give it a nice crunch!), aloe-vera and strawberry jam. To hold it all together, I mixed cream cheese and Greek yogurt to give the dish a wonderful sweet-sour taste! I can eat it all day without feeling guilty and still achieve my nutritional needs :p #cheatmeals
